Who doesn't love the taste of a fresh tomato plucked from the vine, oozing with juicy ripeness.
So when making a tomato pie and the recipe called for draining the tomatoes, I kept the "water" released from them to create a refreshing summer's end thirst quencher.
2 ounces of homemade lemon infused Vodka
2 ounces of tomato water*
a rinse of white Vermouth (or perhaps for something different a rinse of Ginger Liqueur)
a twist of floral pepper (black peppercorns, lavender, and rosebuds mixed into your pepper grinder)
a Martini glass (please, place the glass in the freezer until ready for use)
In preparation, swirl around a rinse of
Vermouth in your glass
Put into a mixing glass the Vodka and tomato water. Add ice. Stir and sir and stir.
Now strain it into your glass and twist the pepper over the drink.
I garnished with a sprig of flowering Thai basil.
* to make the tomato water (in case you are not making a recipe which calls for drained tomatoes!)
Slice several super ripe tomatoes and put them in a colander with a bowl underneath it. Sprinkle with a pinch of salt and sugar and leave to juice for about an hour. The liquid released in the bowl is your tomato water. If nothing else, make a salad with the tomatoes.
